Banana Muffins

Ingredients

  1. 1/4 cup butter, softened
  2. 1/2 a teaspoon of baking powder
  3. 1/2 cup sugar
  4. 1 egg
  5. 1 cup of Dannon® Plain Lowfat Yogurt
  6. 1/2 tsp. vanilla extract
  7. 1 1/2 cups whole wheat flour
  8. 1 tsp. ground cinnamon
  9. 1/4 tsp. salt
  10. 2 bananas, diced


Directions

  1. Preheat oven to 400°
  2. Lightly grease 12 muffin cups or place 12 paper cupcake liners in muffin tin
  3. Beat butter, sugar and egg with electric mixer until fluffy
  4. Add yogurt and vanilla, and beat until smooth
  5. Combine flour, baking powder, cinnamon and salt in medium bowl
  6. Add flour mixture to yogurt mixture, and mix well
  7. Gently stir in bananas. Spoon batter into muffin cups, filling each one about 3/4 full
  8. Bake 20 minutes or until baked through
