Creamy Chicken & Brown Rice Casserole

Ingredients

  1. 2 ½ cups cooked brown rice
  2. 1 package (10 ounces) frozen broccoli cuts
  3. 3 cups shredded cooked chicken breast
  4. 1 cup Dannon® Plain Lowfat Yogurt
  5. 1 can (10.5 ounces) 98% fat-free cream of mushroom soup
  6. 1/2 cup low-sodium chicken broth
  7. 12 butter crackers, crushed into crumbs
  8. 2 tablespoons butter, melted


Directions

  1. Preheat oven 350°
  2. Spread rice in bottom of medium casserole
  3. Arrange frozen broccoli on top of rice
  4. Layer chicken evenly over broccoli
  5. Combine yogurt, soup and broth in medium bowl and mix until smooth
  6. Spoon yogurt mixture evenly over chicken
  7. Sprinkle cracker crumbs on top, and drizzle with melted butter
  8. Bake, uncovered, 35 minutes or until heated through and crumbs are golden
